Shallot Tomato Jam

This Shallot Tomato Jam is such a simple recipe that elevates everything that you put it on. I love using grape tomatoes here, because they’re naturally sweet, and have a lower water content compared to cherry tomatoes, so they cook down into the most concentrated jammy texture!

INGREDIENTS:

– 1/2 medium-sized Shallot

– 1 lb Grape Tomatoes

– 1 tbsp Balsamic Vinegar

– 2 tsp Salt

– 2 tsp Pepper

– 2 tsp Sugar

INSTRUCTIONS:

1. Add oil to a preheated pan and sauté shallots for 3 minutes, or until translucent.

2. Add tomatoes to pan and sauté together for 5 minutes or until the tomatoes start to burst in the pan and you can smush them.

3. Add balsamic vinegar, salt, pepper, and sugar. Stir to combine.

4. Simmer over medium low heat until thick.

5. Serve on a burger, on ricotta toast, or on some boiled noodles.

You can serve immediately or cover and store in the fridge for 5 days.
